Who doesn't love doughnuts? This is another version of baked doughnuts, very easy to prepare, and they dissapeared from the plate by the time I finished baking the second batch.
And yes, I know, they look like muffins. No more room in the kitchen for a doughnut tray, so i had to improvise.

Ingredients: 2 cups of flour (I used gluten free), 1 cup sugar, 2 tsp baking powder, pinch of salt, 1 1/4 cup of milk, 3 tbso oil, 1 egg, 1 tbsp lemon extract.
For the glaze: 1 cup icing sugar (I ran out, so used granulated sugar), 2 - 4 tbsp milk, 2 tbsp oil, 1/4 cup sprinkles.
Preheat the oven at 170 C.
Grease a doughnut / muffin tray.
Mix the dry ingredients in a bowl. Make a well in the middle and add the wet ingredients. Stir until combined.

Pour the mix into the tray and bake for 20 min, until golden. Allow to cool before glazing.

For the glaze, mix the ingredients and dip the top of the doughnuts in the glaze.
