The original pudding is all about excess and naughtiness, but this is a cheated version of it. No worries :).
Ingredients: For the pudding: 200 g dates, 1 tsp vanilla extract, 2 medium eggs, 1 tsp bicarbonate of soda, 175 g flour, 75 ml oil, 50 g brown sugar, 100 g natural yoghurt. For the toffee sauce: 50 g brown sugar, 25 g butter, 1 tsp vanilla extract, 100 g fat free crème fraiche.
Boil 170 ml water. Put the dates in a bowl and pour hot water to cover them. Leave to soak for 30.
After 30 min, remove any excess water and mash the dates with a fork to make a rough purée. Add the vanilla.
Preheat the oven at 180° C. Grease a muffin tray.
Beat the eggs in a small bowl. Put the bicarbonate and flour in another bowl and mix well. Stir the oil in and the sugar.
Add the egg to the flour .
Add the yoghurt to the mix and stir everything together.
Add the dates in.
Put the mix into the muffin tray. Bake for 20- 25 min.
Prepare the sauce. Put the sugar and butter in a pan. Add the vanilla essence and yoghurt. Cook for 1 - 2 min. Do not worry, the sugar will melt eventually.
Take the puddings out of the oven and remove them from the tray.
Serve with some sauce on top.
