Crispy lemon chicken and potatoes

Easy to make one pan meal!
 
 

Ingredients: 4 chicken thighs (skin on), 1 onion, 4 garlic cloves, juice from a lemon, 150 ml chicken stock, 1 tsp honey, 1 tsp mustard, 500 g small potatoes, salt, pepper.
 
Preheat the oven at 180 C.
Season the chicken.

 
 
Heat 2 tbsp of oil in a pan. It must be on high heat. add the chicken pieces, skin facing down.
In the emantime, chop the onion and peel the garlic.
 
 
Check to see if the skin is crispy. If it is, Turn the pieces on the other side and cook for another 5 -6 min.
 
 
 
Remove the chicken from the heat and set in an oven dish.
In the same pan, fry the onion and garlic. Add the honey and mustard. Pour the chicken stock and lemon juice. Cook for 5 min.
Add the potatoes in the oven dish. Pour the sauce on top and bake in the oven for 45 min.
