Pull-apart gluten free dinner rolls

Ingredients: 2 3/4 cups of gluten free flour, 1 tsp xanthan gum, 2 tsp dry yeast, pinch of sugar, 1 tsp salt, 1 cup warm water, 1 egg, 2 tbsp butter, 1 tsp cider vinegar.

Mix the dry ingredients in a bowl.


Melt the butter and add it to the mix. Pour the water as well.


Mix everything into a dough. Split the dough into 6 parts. Shape it into balls and arrange them on a tray. Let it rise in a warm place for at least an hour.


Bake in the preheated oven for 25 min at 180 C.

Cottage pie

Ingredients: 1 onion, 500 g minced beef, thyme, salt, pepper, 1 can chopped tomatoes, 500 potatoes.

Chop the onion and fry it in a large pan with 2 tbsp oil.


Add the meat and cook until brown.


Add thyme, salt and pepper.


When all the meat has turned brown, add the tomatoes. Cook for 20 min, adding a little bit of water now and then to help it cook.


Boil the potatoes and mash them. Add salt, butter and a splash of milk to make it creamy.
Preheat the oven at 180 C.
Put half of the mashed potatoes on the bottom of an oven dish. Level it down.


Add the meat.



Put the rest of the mashed potatoes on top and level it down.


Bake in the oven for 30 min.

Boozy cake

Ingredients: 125 g butter, 300 g dried fruits, 50 g sugar, 1 tsp orange essence, 120 ml Guinness, 1 tsp baking soda, 2 medium eggs, 200 g flour (or gluten free flour + 1 tsp xanthan gum), 2 tsp mixed spices.

Preheat the oven at 180 C.
Mix the butter, sugar and dried fruits in a large bowl.


Add the mixed spices, Guinness, baking powder and orange essence.


Add the rest of the ingredients.



Mix everything gently. Prepare a cake tin by greasing it and dusting it with flour.
Pour the mix in the cake tin.



Bake in the oven for 25 min.


Crispy chicken wings

Ingredients: 1 packet of chicken wings, 2 eggs, salt, pepper, chili powder, 5 tbsp flour (or gluten free flour), 5 tbsp crushed corn flakes.

Preheat the oven at 160 C.
Beat the eggs in a bowl and add salt, pepper and chili powder.


Crush the corn flakes in a bowl.


Cut the chicken wings in half.
Mix the flour with pepper and salt in a bowl.
Prepare a baking tray with baking paper.
Dip the chicken wings in the flour.


Then dip it in the egg and the corn flakes.
Arrange them on the tray and cook in the oven for 35 min.



Chicken tikka masala

Ingredients: 4 garlic cloves, 3 tbsp yoghurt, half tsp garam masala, half tsp paprika, half tsp turmeric, half tsp chili powder, half tsp ground coriander, 500 g chicken breasts.

For the sauce: 1 onion, half tsp paprika, half tsp turmeric, half tsp garam masala, half tsp chili powder, 2 tbsp tomato purée, 1 can chopped tomatoes.
Mix all the spices with the yoghurt.



Cut the chicken into chunks. Stir it in the spice mix. Cover and put in the fridge for at least 1 hour.


Fry the onion with a little oil.


Add the spices.


Cook for 5 min and then add the tomato purée and chopped tomatoes.


Cook until reduced.
Grill the chicken.




Serve everything with rice.

Gluten free flat breads

Ingredients: 400 g gluten free flour, plus extra for dusting, pinch of salt, 300 g yogurt, 100 ml warm water.

Preheat the oven at 180 C.
Mix all the ingredients in a bowl.


Divide the dough and form oval shapes, about 0.5 cm thick. Put them on a tray covered with baking paper. Dust with flour.


Bake in the oven for 7 min on each side.

Apple crumble

Ingredients: 120 g gluten free crumbles (or normal crumbles), 5 tbsp sugar, 300 g apples, 2 tsp mixed spices.

Preheat the oven at 180 C.
Peel the apples and cut them into cubes.


Cook them in a pan with the sugar until the become soft.
Add the mixed spices.


Put the apples in an oven dish.


Pour the crumbles on top.


Bake in the oven for 15 min.


Serve with ice cream or custard.

English scones

Ingredients: 450 g flour (or gluten free flour + 1 tsp xanthan gum), 1 tsp baking powder, 100 g cold butter, 85 g sugar, 285 ml milk, 2 tsp vanilla extract, splash of milk.

Preheat the oven at 180 C.
Put the flour, baking soda and a pinch of salt in a large bowl. Mix.


Add the butter.


Add the sugar.


Mix with your hand until you can't feel any lumps.


Gently warm the milk and add the vanilla essence.


Pour the milk into the flour mix.


Gently mix everything into a dough.


Prepare a baking tray with baking paper and sprinkle with flour.
Wet your hands and start forming the scones. They should be about 2 cm thick. Keep your hands wet.
Glaze the top of the scones with milk.



Bake in the oven for 12-15 min.
