Lamb racks and vegetables

Ingredients: 2 portions of lamb racks, salt, pepper, thyme, smoked paprika, 4 potatoes, 2 carrots, bunch of parsley leaves.

Preheat the oven at 160 C.
Rub the racks with salt, pepper and paprika.






Heat up a pan and fry the racks all around on a big heat to seal the meat. Add the thyme on top.




Put the meat into the oven for 15-20 min. Test it with a toothpick: there should be no blood coming out, just juices.
Steam the vegetables then fry them in a pan. Add the chopped parsley at the end.


The meat should look like this.


Serve it with the vegetables and some pickles.
