Rock cakes

 
Ingredients: 200 g flour, half tsp mixed spices, 100 g soft butter, 75 g sugar, 100 g currants, 1 medium egg.
You can replace the normal flour with gluten free flour + 1tbsp xanthan gum.


Preheat the oven at 180 C.
Put all ingredients in a bowl and rub with your fingers until the mix looks like breadcrumbs.
 
 
 
Prepare a baking tray. Form rocky heaps with your hands and place them on the tray.

 
Bake for 15 min, until golden brown. Allow to cool before eating (if you can).
