Self-saucing Jaffa pudding

Ingredients for the pudding: 100 g butter, 250 g plain flour (or gluten free flour), 140 g sugar, 50 g cocoa powder, 1 tbsp baking powder (or gluten free baking powder), 2 tsp Xanthan gum (if using gluten free plain flour), 1 tsp orange essence, 3 larger eggs, 150 ml milk, 100 g chocolate chunks.
Ingredients for the sauce: 100 g sugar, 25 g cocoa powder, 300 ml water.


Preheat the oven to 180 C.
Butter a 2 ltr baking dish.
Put the flour, sugar, cocoa, baking powder, Xanthan gum, orange essence, and pinch of salt in larger mixing bowl.


 Melt the butter.


Whisk the eggs and milk.


Add the melted butter to the egg mix. Whisk until combined. Pour the mixture onto the dry ingredients.



Mix together until mixture is smooth.



Stir in the chocolate chunks.


Pour mixture into the baking dish.


 For the sauce, bring the water to the boil. Add the cocoa and the sugar and mix together.

 

Pour the sauce on the pudding mixture.



Bake in the middle of the oven for 30 min.


Serve with ice cream.
