Chocolate chip cookies

Ingredients: 85 g butter, 1 tbsp cocoa powder, 1 tsp instant coffee granules, 100 g brown sugar, 85 g dark chocolate, 1 medium egg, 1 tsp vanilla extract, 140 g flour (or gluten free flour), 1 tsp baking powder.

Preheat the oven at 180 C.
Line a couple of baking trays with baking paper.
Put the butter, cocoa and coffee in a medium pan. Heat on low heat until the hughes has melted Then remove from the heat.


Pour it on top of the sugar and vanilla.


Leave to cool.


Add an egg to the mixture and whisk well.


Add the flour and baking powder.


Add the chocolate chopped into chunks. Mix well.Using your hands, shape the mixture into cookies. Place them on the tray, spaced well apart.


Bake for 15 min. Remove them from the oven and place them on a cooling rack.
