Mexican lasagna

Something a bit different, with a little bit for everyone: spicy, crunchy, yummy.




Ingredients: 2 tortilla wraps (you can use gluten free ones if needed), 2 chicken breats, 1 red pepper, 1 onion, 1 can chopped tomatoes, 1 handful nachos, salt, pepper, 1 handfull grated cheese, jalapenos (optional).

Pre-heat the oven at 180 C.
Chop the onion and red pepper. cut the chicken breast in cubes.


Heat a pan with 2 tbsp oil. Cook the chicken and vegetables until softened. Season.


Add the chopped tomatoes and cook for another 10 min.


Grease an oven dish. Add one of the tortillas on the bottom. Pour half of the chicken mix on top of the tortilla. Add the nachos.


Pour the rest of the chicken.


Add the jalapenos and cheese. Arrange the second tortilla on top. Add a bit of sauce on top.

 
Bake for 25 min. Rest before serving.
