Forest fruits cobbler

A very fresh and not so sweet desert. Perfect as an after dinner delight.
Ingredients: 900 g frozen forest fruits (blackberries, blueberries, raspberries, strawberries, etc.), 60 g caster sugar, 2 tbsp cornflour, single or double cream to serve. For the cobbler topping: 200 g plain flour, 2 tsp baking powder, pinch of salt, 55 g unsalted butter, 2 tbsp caster sugar, 175 ml milk, 1 tbsp demerara sugar.

Preheat the oven at 200° C. 
Mix the fruits with the caster sugar and cornflour. Put everything in an oven proof dish. 


To make the cobbler topping, mix the flour, baking powder and salt into a bowl. Bud in the unsalted butter, until it becomes similar to breadcrumbs. Add the caster sugar. Pour in the milk and mix everything into a dough.



Rip the dough into pieces on top of the fruits, but don't cover the fruits completely. Sprinkle with the demerara sugar.


Bake in the oven for 25 min, or until the crust is golden brown.


Remove from the oven and leave to rest for a few min before serving with cream.
