Hunter's chicken

Ingredients: 15 g unsalted butter, 2 tbsp olive oil, 1 chicken - portioned, 2 red onions - chopped, 2 garlic cloves - chopped, 400 g canned tomatoes, 2 tbsp fresh parsley, 6 fresh basil leaves, 150 ml red wine, 225 g mushrooms - sliced, salt and pepper.

Preheat the oven at 160° C. Heat the butter and oil in a casserole and cook the chicken until golden brown and sealed on all sides. Transfer to a plate.



Add the onions and garlic cloves to the casserole and fry until softened. Add the tomatoes, herbs and wine. Season. Bring to the boil then bring the chicken portions to the sauce.


Cover and cook in the oven for 50 min. Add the mushrooms and cook for another 10 min. Serve hot.
