Stir fried rice noodles with prawns and harissa paste

First day at work after New Year... came back home really tired and hungry. So I figured: what do I have in the pantry that can be quickly turned into a delicious meal?!?
Ingredients: half an onion, 1 garlic clove, 1 red pepper, 1 stalk of celery, 300 g prawns, 2 spring onions, half a cucumber, 2 tsp harissa paste, rice noodles.
Slice all the vegetables finely.


Heat 2 tbs of oil into a pan. Stir in the harissa paste, some cayenne pepper powder and paprika.
After 2-3 min, add the onion and garlic. When they start to soften, add the green pepper and celery. Let everything fry for 3-5 min, then stir in the prawns. In the meantime, boil the water for the rice noodles and soften them for 5 min.


Add the rice noodles to the pan and fry for 5-6 min. Then remove from hob and add the spring onions.


Serve warm, with the fresh sliced cucumber on top. It will bring a nice cooling sensation to your palate after the hot harrisa paste.
