Cheat tiramisu

There is nothing better than a classic, but with a little twist.
 
                            
 


Ingredients: 200 ml strong coffee, 200 ml mascarpone, 200 ml low fat creme fraiche, 1 pack of sponge fingers, 1 tsp coffee essence, 2 tbsp sugar, cocoa for dusting.

Prepare the strong coffee.



Mix the mascarpone, creme fraiche and coffee essence.


Add the sugar.



Use a bread tin. Put some plastic foil on it, it will help when taking the cake out.
Start soaking the sponge in the coffee and arrange them in the tin.





When you've completed a level, put half of the mascarpone mix.





Another layer of soaked sponge.


The rest of the mascarpone.


Last layer of soaked sponges.


Wrap it tight and keep it in the fridge for 2 - 3 hours.
Then reverse the cake on a plate.



Dust with cocoa and ornate with some fresh fruits.
