Mango soufflee

If you are a mango lover, you must try this soufflee.

                                   


Ingredients: 1 mango, 2 eggs, 3 tbsp Marsala, 4 tbsp flour, butter and sugar to grease the ramekins.

Cut the mango into cubes. Add to a pan with the Marsala and boil until softened.


Separate the egg yolks and whites.


Beat the egg yolks with a fork.


When the mango is soft, blend it. Pass it through a sieve into the egg yolks.


Mix everything well until combined.


Beat the egg whites until forming peaks.


Add the mango mix to the egg whites and mix carefully.


Fold in the flour.


The final consistency should be of a double cream.


Preheat the oven at 180° C.
Grease the ramekins with butter. Add a tbsp of sugar and rotate the ramekin so that the sugar covers the walls.


Pour the mixture in.


Bake for 10 min, until risen and golden on top.
