Chicken and leak soup, with cream

Ingredients: 1 onion - chopped, 2 leaks - chopped, 2 celery stalks - chopped, chicken bones - I used the back side and the breast bone, salt, pepper, 200 ml vegetable stock, bunch of fresh tarragon, bunch of fresh parsley, 150 ml sour or double cream.



Heat some oil in a large pan and cook the onion until golden. Add the leaks and celery and cook for 2 min.


Add the chicken bones and cook for 10-15 min.


Add the vegetable stock and 1 litre of water. Cover and let it boil for 30 min.


Chop the parsley and tarragon and add it to the soup. Season. Bring to another boil.


After 10-15 min, add the cream and let it boil for 5 min.


Serve in a bowl, next to fresh bread.
