Green cream soup with croutons

First time I used spring greens. It bothered me that they took a while to boil and get softened, so I Google-ed it :). They are particularly rich in vitamin C, folic acid and dietary fibre, making them a very healthy food.
So gave them a chance.

Ingredients: 1 onion - chopped, 2 celery stalks - chopped, 200  green beans - halved, 1 spring green - chopped, 1 bread slice for croutons, salt and pepper.

Heat some oil in a pan.
Chop the onion, celery and green beans.



Add them to the heated oil and cook for 5 min.


Add the chopped spring greens.


Pour enough water to cover the vegetables. Cover with a lid and boil for 25 - 30 min, until the greens are softened.


Take it off the heat and blend it well.Season with salt and pepper.
When ready to serve, put the bread slice in the oven until dry. Cut it in small pieces.
