Healthy breakfast with baked eggs

Looking for a super breakfast?


Ingredients: 1 red pepper, half of onion, 2 garlic cloves, 400 g canned tomatoes, handful of mushrooms, handful of rocket, handful of watercress, handful of spinach, salt, pepper, pinch of dried chilli.

Chop the onion, garlic and pepper.



 Heat some oil. Add the vegetables to the pan and cook until they are softened.



Add the mushrooms.





 Add the tomatoes.



 Season with salt and pepper. Add the dried chilli.



Add all the greens and cook for 2 min.





What's with all the greens woman!?!? And where's the bacon????
Put everything in an oven-proof dish. Make some holes in the dish and pour the eggs in the holes.



Bake for 30 min.
