Potatoes and tarragon chunky soup

Tarragon is  perfect with potatoes. You can also use lemon juice or "bors" to sour the chunky soup.

Ingredients: 1 onion - chopped, 2 carrots - chopped, 2 celery stalks - chopped, 500 g baby potatoes - halved, tarragon, salt.

Heat a little olive oil in the pan and add the onion, carrots and celery. Cook for 5 min. 


Add the potatoes and cook for 10 min, stirring from time to time.


Add water to cover everything and boil until the potatoes are soft. Add the tarragon, salt and lemon juice or "bors". Bring it to another boil.

Add some cream when serving.
