Mackerel en papillote with cherry tomatoes and herbs

Ingredients for 1 person: 1 mackerel, half a lemon, salt, 3 garlic cloves - chopped, bunch of tarragon, basil and thyme leaves, oil, 6 cherry tomatoes, 2 tbsp olive oil.

Wash the fish very well. I like to cook it whole and on the bone, because it gives it more flavour.

Preheat the oven at 180° C.
Place the mackerel on a piece of aluminium foil. 


Rub the fish with oil and salt. Stuff it with garlic and lemon slices. 


Place it on the foil and put the rest of the garlic and lemon on top.


Place the herbs and tomatoes on top as well and sprinkle some more salt.


Cover well in foil and bake in the oven for 35 min.


Open the foil and let it rest for 5 - 10 min.


Something smells fishy, hmmmmmmm.


Remove the herbs and serve with bread and a glass of wine.
