Genzano bread

"Pane di Genzano" originates from Genzano, a little town outside of Rome. Crispy on the outside and soft on the inside, this is great either fresh or toasted.

Ingredients: 400 g white flour, 100 g wholemeal, 1 tsp and a half of dried yeast, 380 ml water, salt.

Put the flours in a bowl. Make a well and put the yeast in the well. Add 100 ml water on top, cover and leave it for 15 min.


Add the rest of the ingredients and mix in a dough.
Put it on a board and knead for 10 min.


Put back in the bowl and rest for 2 hours.


Preheat the oven at 180° C.
Bake for 30 min.
