Baked pancakes with mango, honey and almonds

Ingredients: 1 egg, 2 cups flour, 1 tsp baking powder, 1 cup skimmed milk, 1 mango, 3 tbsp honey, a handful of almonds.

Mix the flour and baking soda.


Add the egg.


Start stirring in the milk.


The consistency should be of  a double cream.
Heat a pan. Add a little bit of butter and let it melt. Pour one ladle of the mix into the pan and rotate the pan so it covers a bigger area.


Cook until it gets all air bubbled - about 1 min.


Flip it over. Cook for another min.


Set aside to rest.


After finishing all the pancakes, fill them with the mango sliced in small cubes. Roll them and put them in an oven dish.


Roughly crush some pancakes.


Preheat the oven at 180° C.
Arrange the rolled pancakes in an oven dish. Sprinkle with the almonds and honey. Add some butter on top.


Bake for 15 min. Serve hot, with some ice cream on top.
