Bird's milk

Ingredients: 500 ml skimmed milk, 3 eggs, vanilla essence, 2 tbsp sugar.

Bring the milk and vanilla to the boil.


Separate the egg whites and yolks. Whisk the egg whites until forming peaks.



Start adding spoonfuls of egg whites into the milk. Cook for 2 min on one side, then flip them over and cook for another 2 min.


Remove them from the pan and let them dry out.


In the meantime, whisk the egg yolks and sugar.


Add the mix to the milk.


Cook for a few min, until it becomes thick.


Serve a few of the "clouds" with some of the custard.
