Poussin wrapped in bacon

Ingredients: 1 poussin per person, salt, pepper, smoked paprika, 2 slices of bacon per poussin, dried chilli, fresh thyme, 1 cup of white wine.

Preheat the oven at 160° C.
Clean the poussin and cut away any fat and unwanted skin. Rub with salt, pepper and paprika. 




Add some chilli.



Wrap them in bacon. Oil an oven dish and put the chickens is with the breasts up. Add the wine and thyme leaves.


Bake for 45 - 50 min, until golden all around.
Serve warm. Do not forget to drizzle some of the juices from the dish on top.
